For many of us, autumn is soup season - a time to celebrate nature’s harvest with recipes that are both hearty and health-boosting.

A simple Autumn recipe to try
Golden Root Vegetable Soup
Ingredients:
- 2 carrots, peeled and chopped
- 1 parsnip, peeled and chopped
- 1 leek, sliced
- ½ small butternut squash, peeled and cubed
- 1 potato, peeled and diced
- 1 clove garlic, crushed
- 1 litre vegetable or chicken stock
- Fresh parsley to garnish
Method:
- Gently fry the leek and garlic in a little oil until softened.
- Add all the root vegetables and stir.
- Pour in the stock and simmer for 25-30 minutes until tender.
- Blend until smooth (or leave chunky for a more rustic feel).
- Season to taste and garnish with parsley.
Serve with wholemeal bread for added fibre and warmth.
